Instructions
Combine lemongrass, basil, 1 shallot, ginger, garlic, brown sugar, turmeric, coriander, cumin, salt, pepper, and red pepper flakes in a food processor. Blend until smooth. Add water if needed.

Dice remaining shallots and set aside.

Heat coconut oil in a large pan over medium heat. Add curry paste and cook for 1 minute.

Add diced shallots and sauté until softened (approx. 2 minutes).
