
Tropical Pavlova Delight

- 30.00 gCornstarch(For custard)

- 12.00 gGelatin Powder(Hydrated in 60ml water)
- 900.00 gHeavy Cream(For custard)
- 150.00 gWhite Chocolate(For topping)
- 500.00 gMango(Palmer variety, sliced)
- 3.00 piecesStar Fruit(Sliced)
- 80.00 gPassion Fruit Pulp(Fresh or canned)
- 10.00 piecesEdible Flowers(Orange and yellow)
Instructions
Whisk egg whites, sugar, and lemon zest in a saucepan over low heat until sugar dissolves and reaches 63°C.
Estimated time: 10 minutes
Transfer to a stand mixer and beat on high speed for 5 minutes. Flame the meringue briefly and beat for another 5 minutes until cool.

Pipe meringue onto a silpat in 4 sizes (5cm, 10cm, 15cm, 20cm). Sprinkle with coconut flakes and bake at 90°C for 80 minutes. Cool completely.

In a saucepan, combine wine, cornstarch, and sugar. Bring to a boil, then simmer for 2 minutes. Add hydrated gelatin and whisk in heavy cream gradually. Refrigerate for 1 hour.

Beat custard until stiff peaks form. Refrigerate.

Melt and temper white chocolate. Drizzle onto the bottom of each meringue disc. Set aside.

Layer meringue discs, starting with the largest, filling the center with custard and passion fruit pulp, leaving a 2.5cm border. Repeat with smaller discs.

Arrange mango and star fruit slices on top. Decorate with edible flowers and white chocolate swirls.
