- 1.00 tspSea salt
- 5.00 cupsChicken broth
- 2.00 cansCannellini beans(15oz each, drained)
- 2.00 cansDiced tomatoes(15oz each)
- 1.00 canCorn(15oz)
- 1.00 cupVegetable broth
- 2.00 tbspLime juice
Instructions
Heat olive oil in a large pot over medium heat. Add onion and peppers and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.

Add chicken and spices to the pot. Sear chicken for 2-3 minutes per side. Pour in chicken broth and bring to a simmer.

Cover and simmer for 20 minutes, or until chicken is cooked through. Shred chicken with a fork.

Stir in beans, diced tomatoes, corn, vegetable broth, and lime juice. Return to a simmer.
