Instructions
Combine cherries and water in a saucepan. Simmer over medium heat until cherries soften (about 8-10 minutes).

Transfer to a blender and blend until smooth. Strain the juice through a fine-mesh sieve.

Return half of the cherry juice to the saucepan. Add sugar, gelatin, and salt. Bring to a boil, then immediately remove from heat.
