Ingredients
- 320.00 gBusiate pasta(Dried or fresh, choose your preference)
- 4.00 Potatoes(Medium size, peeled and sliced)
- 250.00 gTrapanese Pesto(Homemade or store-bought)
- 3.00 tbspOlive Oil(Extra virgin olive oil)
- 1.00 tspSalt(To taste)
Instructions
Prepare the pesto (if homemade).
Estimated time: 10 minutes
Peel and slice the potatoes into even sized pieces.

Boil the potatoes until tender (4-5 minutes). Drain and pat dry.

Heat olive oil in a pan and fry the potatoes until golden brown and crispy (5-7 minutes).

Cook the pasta according to package directions until al dente. Drain, reserving some pasta water.

In a large bowl, combine the cooked pasta with the pesto.

Add a little pasta water to loosen the pesto if needed.

Gently fold in the fried potatoes.
