
Savory Brussels Sprout Stir-Fry with Golden Raisins and Cheddar

- 1.00 lbBrussels Sprouts(Trimmed, halved, thinly sliced)
- 4.00 TbspExtra Virgin Olive Oil(divided)
- 0.25 cupSalted Roasted Almonds(Coarsely chopped)
- 0.50 cupWhite Wine Vinegar
- 3.00 TbspGolden Raisins
- 3.00 TbspHoney
- 0.25 tspCrushed Red Pepper Flakes
- 2.00 ozSharp White Cheddar or Gouda Cheese(Aged)
- 1.00 smallLemon(Zest only)
- 1.00 tspKosher Salt(or Diamond Crystal)
Instructions
Heat 2 Tbsp olive oil in a large skillet over medium-high heat.

Add Brussels sprouts and cook, stirring occasionally, until tender-crisp and slightly charred, about 6-8 minutes.

Transfer Brussels sprouts to a bowl.

In the same skillet, heat remaining 2 Tbsp olive oil and add almonds. Cook until lightly browned, about 45 seconds.
