- 0.25 tspRed Pepper Flakes(Crushed)

- 4.00 ozParmesan Cheese(Finely grated)
- 2.00 tspKosher Salt(Diamond Crystal or Morton)

Instructions
Roast beets: Preheat oven to 400°F. Toss cubed beets with olive oil, salt, and pepper. Roast for 20-25 minutes, or until tender.

Cook pasta: While beets roast, cook pasta according to package directions.

Fry sage: Heat olive oil in a pan over medium heat. Add sage leaves and cook until crispy, about 2-3 minutes.

Sauté sausage: Add sausage to the pan and cook until browned. Add garlic and red pepper flakes, cook for 30 seconds.

Combine ingredients: Add cooked beets, pasta, and ½ cup pasta water to the pan. Stir in butter, Parmesan, salt, and pepper.
