- 1.00 bunchFresh Sage(Stems removed)
- 1.00 lbItalian Sausage(Hot, casings removed)
- 7.00 clovesGarlic(Finely grated)
- 0.25 tspRed Pepper Flakes(Crushed)
- 5.00 TbspUnsalted Butter
- 4.00 ozParmesan Cheese(Finely grated)
- 2.00 tspKosher Salt(Diamond Crystal or Morton)
- 1.00 tspBlack Pepper(Freshly ground)
- 1.00 TbspLemon Zest(Finely grated)
- 1.00 TbspLemon Juice(Fresh)
Instructions
Roast beets: Toss cubed beets with salt, cover with water, and boil for 5 minutes. Add pasta and cook until al dente, about 1 minute less than package directions.

Sauté sage: Heat olive oil in a pot. Add sage and cook until crispy. Remove and set aside.

Cook sausage: Add sausage to the pot and cook until browned. Add garlic and red pepper flakes.

Combine ingredients: Add cooked beets, pasta, and ½ cup cooking liquid to the pot. Stir in butter, Parmesan, salt, and pepper.
