- 4.00 linksItalian Sausage(Remove casing if desired)
- 1.00 Carrot(Diced)
- 1.00 stalkCelery(Diced)
- 1.00 Onion(Diced)
- 2.00 clovesGarlic(Minced)
- 1.00 tablespoonTomato Paste
- 0.50 cupDry Red Wine
- 2.00 cupsVegetable Broth
- 2.00 tablespoonsOlive Oil
- 2.00 leavesFresh Sage(Chopped)
- 1.00 teaspoonSalt(To taste)
- 0.50 teaspoonBlack Pepper(To taste)
Instructions
Rinse and soak lentils for 30 minutes.
Estimated time: 15 minutes
Dice vegetables (carrot, celery, onion).
Estimated time: 5 minutes
Heat olive oil in a large pot. Sauté vegetables and garlic until softened.

Add tomato paste and cook for 1 minute more.

Add sausage and cook until browned.
