- 15.00 ouncesRed Kidney Beans(DRAINED and rinsed)
- 1.00 tablespoonItalian Seasoning
- 1.00 teaspoonSalt
- 1.00 teaspoonPepper
- 1.00 teaspoonOnion Powder
- 28.00 ouncesDiced Tomatoes(1 can or 2 smaller cans)
- 0.25 cupTomato Paste
- 6.00 cupsVegetable Broth(Low sodium preferred)
- 1.00 cupPasta(Elbow, small shells, or ditalini work well)
- 1.00 tablespoonLemon Juice(Freshly squeezed)
Instructions
Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook until softened (approx. 5 minutes).

Stir in garlic and cook for 30 seconds. Add potatoes, beans, Italian seasoning, salt, pepper, onion powder, tomato paste, diced tomatoes, vegetable broth, and pasta.
