- 3.00 Bird's Eye Chiles(Thinly sliced, for garnish.)
- 1.00 smallOnion(Thinly sliced.)
- 1.00 Scallions(Cut into 1/2-inch pieces, for garnish.)
- 8.00 ozWater Spinach(Stalks and leaves separated, cut into 2-inch pieces.)
- 0.25 cupBaijiu(Light-aroma baijiu or michiu (Taiwanese rice wine).)
Instructions
Marinate lamb: Whisk together shacha sauce, soy sauce, sugar, and garlic. Add lamb, toss, and marinate for 15-30 minutes.

Cook noodles: Boil salted water. Add noodles, cook until tender (10-30 seconds). Drain and set aside.

Fry eggs: Heat oil in a wok or skillet. Crack in eggs, fry until crispy edges and soft yolks (2-3 minutes). Set aside.

Stir-fry vegetables: Add more oil. Stir-fry chiles, onion, and scallions until fragrant (2-3 minutes). Move to side.
