- 1.00 lbShrimp(Peeled and deveined)
- 2.00 tablespoonsOlive Oil(Extra virgin)
- 4.00 clovesGarlic(Minced)
- 1.00 mediumOnion(Finely chopped)
- 1.00 mediumLemon(Zest and juice)
- 1.00 teaspoonDried Oregano(Fresh oregano is also great!)
- 1.00 teaspoonSalt(Kosher salt)
- 1.00 teaspoonBlack Pepper(Freshly ground)
- 1.00 tablespoonFresh Parsley(Chopped)
Instructions
Preheat oven to 400°F (200°C).
Estimated time: 5 minutes
Halve and seed the butternut squash. Drizzle with 1 tablespoon olive oil, salt, and pepper. Roast for 25 minutes.

While squash roasts, heat remaining olive oil in a large skillet over medium heat.

Add shrimp and cook until pink and opaque, about 3-4 minutes per side.

Add garlic and onion to the skillet and cook until softened, about 2 minutes.

Stir in lemon zest, oregano, salt, and pepper. Add lemon juice.

Remove squash from oven and scoop out the flesh.
