Instructions
Preheat oven to 450°F (232°C). Line a roasting pan with foil and place a rack inside.

Pat turkey dry inside and out with paper towels. Remove any thermometers or trussing.

Locate and remove the wishbone from the neck opening.

Separate turkey breast from skin.
