- 1.00 lbPasta Shells(Lumache or other medium shell pasta)
- 1.00 ozParmesan Cheese(Finely grated)
- 5.00 TbspUnsalted Butter
- 1.00 TbspDijon Mustard
- 2.00 tspSugar(Adds depth of flavor)
- 2.00 tspWorcestershire Sauce
- 2.00 tspKosher Salt(Adjust to taste)

- 8.00 ozGruyere Cheese(Coarsely grated)

Instructions
Heat olive oil in a large oven-safe pot over medium-high heat. Add onions, salt, and pepper; cook until deeply caramelized (30-35 minutes), stirring occasionally and adding water as needed.

Stir in garlic and thyme; cook for 1 minute. Add wine and cook until reduced by half.
