  • 1.50 tspSugar(Granulated sugar)
  • 2.00 clovesGarlic(Smashed and peeled)
  • 1.00 sprigRosemary
  • 1.00 sprigThyme
  • 2.00 cupsCoarse Sea Salt
  • 2.00 TbspVegetable Oil
  • 1.50 tspBlack Peppercorns
  • 20.00 clovesGarlic(Coarsely chopped)
  • 2.00 mediumOnions(Coarsely chopped)
  • 1.00 leafBay Leaf
  • 1.00 wholeStar Anise
  • 1.50 cupsLight Brown Sugar
  • 0.50 cupFermented Black Beans
  • 3.13 TbspRed Miso(Plus 1.5 tsp)
  • 1.00 cupCane Vinegar(Datu Puti brand or rice vinegar)
  • 0.44 cupFilipino Soy Sauce(Datu Puti brand or other soy sauce)

Instructions

Preheat oven to 350°F. Whisk together vinegar, salt, sugar, garlic, rosemary, and thyme. Toss beets and place in foil packet. Add coarse salt to baking dish. Place packet on top of salt.

Bake for 2.5 hours, or until tender. Let cool.

Heat oil in a medium pot over medium heat. Add peppercorns, garlic, onions, bay leaf, and star anise. Cook until softened.

Stir in brown sugar, fermented beans, and miso. Cook until fragrant.

Add vinegar and soy sauce. Reduce heat to medium-low and simmer for 25 minutes.
