Ingredients
- 395.00 gFull-Fat Coconut Milk(Use canned coconut milk, refrigerated overnight to separate the solids from the liquid.)
- 1.00 canFull-Fat Coconut Cream(Use the thick, solidified cream from the refrigerated coconut milk.)
- 2.00 Egg Yolks
- 2.00 tbspCornstarch
- 1.00 tspVanilla Extract
- 2.00 packagesChocolate Sandwich Cookies(Use your favorite chocolate sandwich cookies.)
- 3.00 tbspUnsweetened Cocoa Powder
- 1.00 cupPlant-Based Milk(Use almond, soy, or oat milk.)
Instructions
In a saucepan, whisk together coconut milk, coconut cream, egg yolks, cornstarch, and vanilla extract.
Estimated time: 5 minutes
Cook over medium heat, stirring constantly, until the mixture thickens (about 8 minutes).

Remove from heat and continue stirring until slightly cooled.
