Ingredients
- 225.00 gAll-Purpose Flour(Ensure it's gluten-free if needed)
- 75.00 gIcing Sugar
- 2.00 clementinesClementine Zest(Freshly squeezed juice is also needed)
- 125.00 gChilled Baking Block(Cubed)
- 200.00 gMincemeat(High quality mincemeat for best flavor)
- 2.00 tbspSoy Milk
- 1.00 tspVegetable Oil
- 1.00 tspGround Cinnamon(For dusting)
Instructions
Whisk together flour, icing sugar, and clementine zest in a large bowl.
Estimated time: 5 minutes
Rub in the cubed baking block until crumbly.

Add clementine juice and mix until a dough forms.

Knead briefly on a lightly floured surface, wrap, and chill for 20 minutes.

Roll out pastry to 3mm thickness. Cut out 24 8cm discs.

Cut festive shapes from half the discs.

Place mincemeat on 12 discs, brush edges with water, and top with another disc.

Crimp edges with a fork and chill for 30 minutes or freeze.

Preheat air fryer to 200°C (400°F) for 5 minutes.

Whisk soy milk and oil, brush tops of pies, and air fry for 5-7 minutes until golden.

Transfer to a wire rack, cool, and dust with icing sugar and cinnamon.
