Instructions
Prepare the cabbage: Trim the core, remove leaves, and roughly chop into bite-sized pieces.

Caramelize sugar in a pot, add apple cider vinegar, orange juice, port wine, and red wine. Add spices to a tea strainer and simmer. Cool completely and remove spices.

Pour marinade over cabbage and marinate for 4 days, weighted down. Flip daily.
