Instructions
Preheat oven to 375°F (190°C). Prepare a 9-inch springform pan by wrapping it tightly with double layers of aluminum foil.

Combine graham cracker crumbs, melted butter, sugar, and salt. Press firmly into the bottom of the prepared pan.

Bake crust for 10 minutes, then reduce oven temperature to 325°F (165°C).

In a large bowl, beat cream cheese, sugar, and flour until smooth. Add vanilla, lemon zest, lemon juice, and salt; beat on low speed until combined.

Gradually add eggs, one at a time, mixing until incorporated. Stir in dairy-free sour cream.

Pour batter over the baked crust. Place the pan in a larger roasting pan and pour boiling water into the roasting pan to come halfway up the sides of the cheesecake pan.
