Ingredients
- 1.00 beanVanilla Bean(Extract seeds from bean)
- 3.00 dlHeavy Cream(Use high-quality cream)
- 1.00 dlMilk(Whole milk recommended)
- 0.75 dlGranulated Sugar(For custard)
- 4.00 piecesEgg Yolks(Room temperature)
- 2.00 tbspBrown Sugar(For topping)
Instructions
Preheat oven to 150°C (300°F) with a water bath in the oven.

Split vanilla bean lengthwise and scrape seeds into a saucepan.

Combine cream, milk, and vanilla seeds in saucepan. Bring to a simmer, then remove from heat and let steep for 10 minutes.

Whisk egg yolks and granulated sugar until pale and thick.

Gradually whisk the hot cream mixture into the egg yolks.

Pour custard into ramekins. Place ramekins in a baking pan filled with hot water (water bath).

Bake in preheated oven for 50-60 minutes, or until set.

Remove from water bath and let cool completely.

Refrigerate for at least 4 hours to allow the custard to set.

Preheat broiler. Sprinkle brown sugar evenly over the crème brûlée.
