- 2.00 Boneless Skinless Chicken Breasts(Optional for non-vegetarian version)

- 2.00 sprigsFresh Tarragon
- 1.00 Bay Leaf
- 5.00 cupsLow-Sodium Chicken Broth

Instructions
Heat oil in a large pot over medium heat. Add carrots, parsnips, celery, leek, and onion; sauté for 5 minutes, stirring frequently.

Add garlic, salt, and pepper; sauté for 1 minute more.

If using chicken, add chicken, thyme, tarragon, bay leaf, and broth to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until chicken is cooked through.
